Anyone know what HDR means in the Settings?

"High Dynamic Range"??
Some special kind of graphics rendering mode I do not know how to describe right now.

makes thing look better basicly :)
better contrast, bloom, highlights
but with older Nvidia cards AA will stop working

Actually, HDR in ToW2 stops AA working even with a GeForce 260. No matter what settings you have in ToW2 and control panel.
Empire Total War's HDR and AA works togheter with no problem at all.

funny thing is, with HDR on the demo looks fine
but if I turn it off, I get a weird ghosting issue!

Yep, you have to uncheck "ambient occlusion" and the ghosts are gone.

it's off....
I get these giant filled out squares. I'm not the only, others have the same problem....

You mean if you turn off HDR and Ambient occlusion you have graphical glitches? Is AA turned on in control panel?

yes
turing off AA in the control panel fixed it
so there is some issue with the AA?

High Dynamic Range "Lighting" to be complete.
For example, in RL you see an overbright sun when you walk over a hill when the sun is glaring directly in your face. This causes everything you see to be more bright. HDR lighting tries to mimic those effects ingame.
